Sometimes just thinking of an idea for dinner can be enough to keep you out of the kitchen.
We all get tired of our same dinner routine and it makes it that much easier to go out or grab something to go.
To help you out of the dinner rut we all find ourselves in, I’ve put together my favorite 20 Minutes Dinner Ideas. They are hardly even recipes – just simple menus with fresh ingredients.
Each recipe is full of flavor and healthy vegetables, but are so easy to prepare.
They are simple enough for two on a Tuesday night, but elegant enough for entertaining, too!
Season flank steak with Salt and Pepper. Grill on each side for 4 minutes, remove and let rest, covered with foil for 10 minutes. Slice thinly.
In a medium sauce pan, cook onion squash and zucchini for 5 minutes, until soft. Add can of tomatoes, chicken broth, chicken and corn. Season with salt to taste. Cook for 10 minutes until warmed through. Serve with Cilantro garnish.
Oil a baking sheet. Spread dough out on pan. Place garlic clove in a small bowl with olive oil and crush with fork. Brush on oil and garlic on dough. Spread tomatoes and mozzerella on dough. Bake at 425 for 10-15 minutes until dough is browned. Top with fresh basil or chives.
For vinaigrette, mix together olive oil, lemon and dijon. Toss with greens. Place on platter or individual plates. Top with slices of tomato, prosciutto, crumbles of goat cheese and almonds.
